Besides Dai Pai Dong and Cha Chaan Teng, there is this culinary magic in Hong Kong that embodies the perfect blend of Chinese and western food cultures: “Soy Sauce Western cuisine”. 

Back in the early colonial days in Hong Kong, dining at a western restaurant is an exclusive experience for the top privileged, meaning not for Chinese folks. Since, later on, more and more Chinese elites broke through the social economic barrier, soy sauce western restaurant emerged, providing western food with a Chinese twist, as the name obviously suggests.

Among them all, Tai Ping Koon is the most iconic one in the city. Still run by the Chui’s family, the vintage restaurant has been specialising at Hong Kong style cuisine for more than 100 years. Tai Ping Koon is renowned for its signature dishes including roasted young pigeon, baked crab meat in shell, baked Portuguese styled chicken, and the legendary Swiss sauce chicken wings.

But what is Swiss sauce anyway? Rumour has it that it was a marinade created by Tai Ping Koon in which soy sauce, rock sugar, Shao wine, spices and chicken broth are combined. This very Hong Kong style sauce gives the chicken wings not just flavour but also a tempting glaze. As to answer the amazed guests who raised a question of “what is the sauce”, the staff, due to poor articulation, said Swiss while they actually meant sweet.

Apart from the mixed creation, steak, chicken, pork, and seafood are also covered in the restaurant’s a la carte menu. For dessert, shuffle is the choice.
