Sister Wah has been an all-time favorite eatery for the locals, offering the Beef Brisket Noodle Soup at its best. The long line outside the restaurant is also a symbolic scene of the place, but their efforts and patience being put into the dish explain all. They start prepping and cooking the 150kg fresh pure beef every day at 8 in the morning and use up to 10 spices to make the broth for a better balance of flavors – Sister Wah is famous for a reason.
They serve large portion of their signature Beef Brisket Noodle Soup ($50) which the noodles of your choice are soaked in a clear flavorful broth and topped with a generous amount of beef brisket. Unlike the typical strongly flavored one cooked in multiple sauces and spices, their beef is already rich in pure meat flavors without a heavy layer of sauce. If you look closely, you will find there are cuts on the beef surface, which is the secret that makes the meat absorb the flavors better, tender, and easy to chew. Nobody blames you if you don’t share your bowl.
Their honeycomb tripe – the first stomach of a cow, is also another must-try for the foodies who prefer chewiness in their meal. You could pair it up with “Lo Mein” (撈麵) – stirred noodles ($62) that are fully soaked in the beef brisket broth, and spice it up with the chili sauce for extra flavors! But the alkaline flavor in the yellow noodles is somehow too strong for any likings despite being bouncy in texture.
