In the 1950s-60s when Hong Kong’s economy just started to grow, there were less resources in the society. A simple dish like fried eggs with soy sauce on rice was a popular item. It could enable a kid to have two extra bowls of rice. Ma Sa Restaurant has made it their signature item.
Ma Sa Restaurant has its own custom-made soy sauce and specially chooses eggs from Hubei for its flavour and colour. The most special thing about their BBQ Pork Fried Egg with Rice (叉燒煎蛋飯) is there are three eggs, while most restaurants only do two eggs. The sunny side up is made on point that there is a crispy edge whereas the egg yolk is only cooked 60%-70%. The egg yolk will slowly leak out as you poke it. Remember to mix it well with the soy sauce before you put the spoonful of rice into your mouth.
The order placing system in Ma Sa remains in the traditional way. The staff will call out loud your order to pass on the message to another staff near to the kitchen, who will then pass on your order to the chef. No notes needed to be written down! They remember all your orders. A piece of paper with a number on will be given to you and that’s your bill, the amount you need to pay.
If you pay attention to other customers, you will realise the staff already know what to order for them as they enter the restaurant. Perhaps it is the human touch that still attracts many of its customers to return to the restaurant.
