All good food has a story to tell so does the Cart Noodles. Hong Kong back in the 1950s was nothing like the present international city, where it was flooded with Chinese refugees from the Civil War and the people could barely make a living other than selling cheap eats on streets, illegally. And all the grassroots needed at the time was a warm bowl of noodles that were both affordable and filling to satisfy their basic needs – this is how the Cart noodles was created.
How the hawkers made their wooden food cart somehow reflects the nature of Hong Kongers, who are flexible and can adapt to any situation. Mobile food vendors were banned by the government so they transformed the cart to minimize the loss if caught: making it out of the cheapest materials, using kerosene cooking to increase mobility, and adding springs to prevent vibration when running away from the cops. But some preferred less chaotic life so bribing was also a way out. Everyone hated the unlawful act by the police though and such behaviors had gradually disappeared(!) after the establishment of ICAC (Independent Commission Against Corruption).
The Cart Noodles still remain a favorite tradition connecting every Hong Konger nowadays, which they can get to personalize their own bowl.
