I’d be damned if I as a local don’t write about the legendary Temple Street Beef Offals. Done searching on Google, no English media has featured it- yet. See that’s how local it is, therefore you should try. And if you are not freaked out about broadening your taste horizon, make no mistakes, just go to the red stall at Temple Street for the best classic flavor.

Tucked away at north side of Temple street, Temple Street Beef Offals has been treating locals with its famous braised beef offals for more than 50 years. As the street market comes to life in the evening, the red stall also gets busy with a crowd waiting to satisfy their crave for old Hong Kong taste.

The flavour all lies in their secret marinade, an incredibly rich brine that turns things into magic. It has always been the same stock boiling for decades. Only water and more spices are added from time to time so you can imagine how rich it is.

Different part comes with different taste and texture. The lung is lean, smooth but firm, without the roughness of meat grain. The stomach, usually the most popular part and the intestine are both chewy but the latter is more fatty which gives it a unique aroma. The spleen could be a bit impactful if you are not ready for its gamey taste and unusual texture.

I know what you think: Isn’t it gamey and… dirty? At Temple Street Beef Offals, compared with other, the gamey-ness is quite mild. Speaking of cleanness, it’s a place we can trust for the shop spends great effort to remove from the ingredients any bit of unwanted dirt by hand and wash it thoroughly.

Apart from beef offals, fishballs, radish, and pomelo peel, very old school street snack, are also available.

It’s a leap of courage. Grab a beer and take that challenge.
