Named after the local ultimate snack that has a slab of butter in between the bun, the Skye’s version of Bo-Lo-Yau is sinfully creamy and rich from the custard foam, butterscotch and the butter-fat infused Monkey Shoulder, with a hint of lemon sourness that balances off the sweetness. The bartender is also creative enough to serve it in a coconut shell that resemble the round-shaped bun. 

The French 57, blended with gin, lemon, rose champagne and topped with elderflower foam, perfectly suits those who prefer floral fragrance and refreshing taste.
