Since the 1940s, Mak Man Kee Noodle Shop has been selling its signature dish, the shrimp wonton soup noodles. Over the decades, the business of Mak Man Kee Noodle Shop has expanded that it moved from a mobile stall to a decent shop on Parkes street.
Their secret recipe for making springy noodles is passed down by Mak Woon-chi, a Cantonese cook who is famously known as the “father of wonton noodle”. He is also the first one to prepare wanton with full shrimps and egg noodle made with duck eggs.
At Mak Man Kee Noodle Shop, the chefs are keen on improving their existing recipes. According to Lesley the shop owner, they have partnered with traditional noodle shops for many years to find their perfect formula for making paper-thin translucent wanton skin. Also, the pressure exerted by the chef when wrapping the wanton has to be precise – too forceful and the wanton would be brick-like; wrap it too loosely, then it will fall apart. Therefore, wrapping a good wanton highly depends on the chef’s professional experience.
